Vietnamese Pho
Serves 2-4
You will need:
1 Nem Viet Pho Kit
100g beansprouts
500ml beef stock, good quality
500ml water
250g beef, rump, brisket or sirloin, very thinly sliced
  1. Place noodles in a large bowl of boiling water, cover and leave to soften for 5 minutes, then drain, rinse and divide into bowls. Top with beansprouts.
  2. Heat the stock, water and seasoning mix in a pan. When boiling, add the beef strips and simmer for about 5 minutes until the meat is just cooked and tender.
  3. Ladle soup over the noodles and serve with the sauce in a small dish on the side. Add sauce to the soup, as desired, for extra flavour and heat. 
Tip:For more colour and flavour, add chopped coriander and spring onions at the same time as the beansprouts. Substitute beef with cooked chicken, prawns or fish.
